[Sharpness] The sharpness of the Ryujin knife is achieved through the traditional sharpening method called "Edo-giri," performed by skilled craftsmen, a rare expertise in Japan. The 7:3 sharpening ratio achieved through Edo-giri contributes to its sharp cutting edge.
[Structure] The structure of the Ryujin knife integrates the blade (made of molybdenum vanadium steel) and handle using only stainless steel, without any screws, and is meticulously finished by the skillful techniques of craftsmen. The handle features a lightweight hollow structure and is designed to be easy to grip with intricate carvings similar to Kamakura carving.
