It comes from Southeast Asia and is one of the oldest spices of Chinese, Indian and Japanese cuisine. You may know it as a Fagara. It's not a classic pepper, but a dried red to black capsule of an acacia like shrub called peppermint. Their taste is lemon pepper, very aromatic and not as sharp as classic pepper. You can also support the aroma by roasting the whole capsules. Only very small cans are used for seasoning, but avoid completely black capsules that are very bitter. In China, green tea is seasoned with roasted, crushed Szechuan pepper.
