Have you tried 72 hour sous vide short ribs? They're awesome. What's not awesome is having to keep topping up the water in your container as it slowly evaporates. Nor is losing the heat to the air and knowing that you are just lining your electric utility's pockets for no good reason. Kill two birds with one stone by using a floating lid from polypropylene balls. These balls automatically conform to the shape of the container, and greatly reduce evaporation, so you can use anything you like to sous vide with. You can use a stock pot one day and a coleman cooler the next. Heck, you can use your bathtub if you like and the balls will still keep the evaporation down (you're going to need more than one set in this case though). If you need to put bags in or get them out during the cooking, there is no need to fuss with undoing a lid and snapping it back on again. The balls are made of BPA-free polypropylene and we've included a handy drying bag for, well, getting them to dry and keeping them all together and out of the way.
