For those chefs that prefer a smaller knife, the Shun Classic 6-Inch Kiritsuke Knife is a great solution. It features a slightly shorter blade for easy maneuverability and versatility. This smaller version of the Classic 8-Inch Kiritsuke Knife is capable of completing several cutting tasks around the kitchen. This 6-inch knife blade slices, dices and minces. Its slightly curved edge is ideal for rocking cuts. Kiritsuke is the only multipurpose traditional Japanese knife and in Japan only the executive chef in the kitchen is allowed to use one. Shun Classic knife blades are made with solid core of Shun's proprietary VG-MAX steel and feature a 16 degree cutting angle on each side. The ebony D-Shape Packwood handles have that sleek, sophisticated look that makes these knives feel more like art, than instrument and are specifically designed for premium applications. The specially shaped handles rest perfectly in the curve of the fingers, for a more secure grip while handles remain moisture resistant. The bolster is ground out more on the right side for proper finger placement, as well as balancing the knives perfectly.
