Grow a garden filled with fresh Arugula herbs, from freshly harvested Eruca sativa herb seeds. Arugula Roquette is a leafy green herb that gives off a peppery flavor when consumed. The delicious leaves of these plants are often used in salads. Each herb will grow to a mature height of about 6 to 12 inches tall and can be harvested in about 21 to 40 days, depending on how large you would like the leaves. Baby Arugula leaves tend to have more flavor. The plants are best grown in cooler climates, making them perfect for Northern Gardeners. Arugula is an annual herb which grows quickly from freshly harvested seeds. The plants mature within a few short weeks and the seeds can be sown every other week, or every 2 weeks for a harvest that lasts all season. If allowed to bolt, (go to seed) you can collect fresh seeds at the end of the season to regrow the following year.
