500 Grams Renco Powdered Calf Rennet Powder. Usage rate of the powdered veal rennet powder can be expected to be in the range of 2 to 3 grams per 100 liters (25 gallons) of milk. Chymosin: Minimum: 92%, typically 94% to 96%. Pepsin: 4% to 8% based upon the differential of Chymosin, Sodium Chloride and less than 0.1% Sodium Benzoate as a preservative. The strength of New Zealand calf rennet powder is maintained at a constant level directly related to the coagulation of whole milk. The exact amount to use will vary according to the type or milk or cheese being made. The recommendation is to dissolved the powder in 50 times its own weight of chlorine free water allowing 30 minutes with some light stirring for complete dissolution of the powder.
