Glucomannan is a water-soluble polysaccharide extracted from the tubers (roots) of Konjac, which is cultivated as food in Japan and Indonesia. Because human digestive enzymes cannot break down this polysaccharide, it passes through the body largely intact, which is the reason it is classified a dietary fiber.
