After looking for silicone baking mats in the market to make macarons, we could not find anything that would meet what we would like to have on a baking mat. We came up with the mat with perfect thickness and pattern. The spaces between the big circles are just perfect. Not too close so that the macaron shells ended up sticking together when baked. Not too far that yields only a few shells per sheet. Perfect use of space on a sheet. That is why we make 2 different patterns. One for mini-sized macarons that yields 53 shells per sheet. One for regular-sized that yields 28 shells per sheet. Used in place of parchment to help prevent sticking or burning. This flexible modern baking mat of silicone-coated fiberglass cloth turns any surface or pan into an easy-release, non-stick surface for dough prep and baking. Mat may be placed directly on the oven rack, cleans up in the dishwasher, and rolls up for compact storage. These mats are made by bakers for bakers.
