Hinoki (Japanese Cypress) is highly sought after by knife aficionados and is the recommended cutting board material by none other than famed blade smith Bob Kramer. This large hinoki board measures 20 x 12 inches and is a full inch thick, making is practical, yet easy to put away when not in use. A soft wood, hinoki is much more gentle on the knife edge than a traditional wood board such as maple, cherry or walnut. This helps to keep the blade edge and requires less knife maintenance over time when using a hinoki cutting board. In addition to its qualities in the kitchen, hinoki has been used for centuries by Japanese nobility, who have used the wood in the building of temples, due to the natural durability. Possessing a uniquely high level of organic phytoncide compounds that prevent the growth of mold, fungus and bacteria, hinoki performs exceptionally well in water and the elements. This is why hinoki is almost exclusively used in the construction of luxury bath houses and soaking tubs in Japan.
