About Fatworks, Organic Free Range Pork

Organic Pork Lard is inherently NON-GMO free and is great for those who are wanting official USDA "Organic" ingredients.  The pork we use is culled from the back fat and belly fat of organic pigs. It does take the guess work out of it as you do not have to trust us, instead you can know that the USDA has certified all the pork we use as being 100% Organic. Both the Pasture Raised and Organic pork are fat-tastic so the choice is up to you! (We aren't going to play favorites). You may be wondering why our organic sourced pork lard is less expensive than our pasture raised pork lard? Although not abundant by any means it is more available than pasture raised pork, hence it has been less expensive to source. Organically raised pigs are given space on the farm to be free ranging, and of course they are given the highest quality NON-GMO Organic feed, but since they are not strictly raised "on pasture" or in woodlands, they are easier the farm. Since we are able to source more of their delicious fat for less, we are more than happy to pass this savings to you.  Our Organic-sourced Lard is a robust fat that is great for everyday cooking. Use for browning meat, sautéing veggies and baking both sweet and savory treats. Lard has a high smoke point of 370°F so it is also great for frying your favorite potatoes. To appease the USDA standards of identity our lards and poultry fats contain very small (about .03-.01%) amounts of Organic Rosemary Extract.  Rosemary is not a preservative! It does have natural antioxidant properties which are beneficial in lard and adds a hint of a herbal smell, although the rosemary is so slight that it does not come through in the flavor.
