The Bison grill is designed to be versatile and last a lifetime. The Grill is setup to use a Rotisserie and yes that allow air into the firebox. It is however possible to have lower temperatures and preform indirect cooking for a period of time but in order to do this it is important to start with an amount of Coal equal to the temperature you are trying to create. You can sear a steak on a Bison Grill or Slow cook a whole chicken or Roast but we suggest that you start with the slow cooking menu item then move to the searing by adding coals to reach that temp. Typically the slower cooking requires more time so this typically works out for meal preparation for your family and friends.
