GUATEMALA HUEHUETENANGO Ixlama coffee comes from specially selected small producers, like Finca El Paternal and Finca Nueva Palmira, from the highlands of San Pedro Necta and La Libertad, both located in the state of Huehuetenango, Guatemala. This shade-grown coffee is harvested and brought to the mill where it is sun-dried on a patio and placed in guardiolas, then separated by color via computer and then density/size mechanically, which results in a superior bright cup. This coffee is grown at 1524-1830 meters elevation, on farms El Paternal, Finca Nueva Palmira in Guatemala's Huehuetenango region. The plant varietals are Bourbon, Caturra, it is fully washed then sun-dried and computer sorted resulting in bright cup juicy finish, medium body, plum black pepper. 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
