These delicacies are made from the meat of the native Iberian hog, a breed identified by having black hair and black hooves. Born and raised on our farm in Extremadura, each autumn Redondo specially selects particular hogs to fatten on the holm and cork oak acorn, plentiful in the rolling of south-western Spain. For a minimum of three months these hogs feast on oil and protein-rich acorns. Curing takes place under snow-capped mountains and forest of Mediterranean pine and chestnut trees. The curing and aging process takes minimum of 24 months for shoulders(Paleta) and 36 months for Hams (Jamón). Redondo follows a centuries old tradition of curing. The dry, cool mountain air from Finca Los Llanos holds the secret to what makes these hams cured to perfection.
