The Enso HD Paring Knife is ideal for peeling, coring, trimming, decorating, and other detail work. Also can be used for chopping small foods, such as garlic cloves or ginger. The slight belly curve enables the cook to rock the blade for mincing small items, such as herbs. Easy to control 6.5" blade length, this knife is light, nimble and razor sharp out of the box. The Enso HD series features knives crafted with a 37 layer stainless steel Damascus construction and a VG10 Japanese steel core. The Rockwell Hardness of Enso HD knives is 61 degrees, so you can be sure this knife will retain its edge after a lot of use, but will still be relatively easy to sharpen. The handle is made from premium black canvas micarta for a wood-like feel but much more durable. Stainless steel rivets secure the handle to the enclosed full-tang and the stainless steel on the grip end provides a great overall balance.
