It’s designed by industry experts to overcome hard steel’s notorious brittleness. How do we do it? Our proprietary Triplex technology sandwiches a layer of the hardest Erdon steel, HRC 62°, between 2 layers of softer HRC 10° Erdon steel to achieve a perfect hard-yet-flexible blade for the ultimate cutting edge and performance. The Sashimi Knife is available for both right-handed (3033) and left-handed (3033L) chefs.
