About F. Dick - 10" Breaking Knife, Hollow

The Ergogrip series from F. Dick were designed and constructed to be a professional, commercial grade line for butchers. Ergogrip line from F. Dick was designed for the serious butcher looking for a high-end work knife that was built to provide comfort and dependability. Ergogrips are constructed of X55CrMo14 high-carbon stainless steel with a Rockwell hardness of 56. Handles are constructed of Polyamides - nylon polymers known for their resistance to wear and abrasion, heat tolerance and resistance to chemicals. The Ergogrip line from F. Dick was designed for the professional looking for a commercial quality knife that not only has a sharp, long lasting edge, but would offer all day comfort. CLEANING - F. Dick products with plastic handles are dishwasher proof. In the long run, a change in color intensity, staining and rusting may occur. We recommended cleaning all chef’s knives by hand. F. Dick knives and sharpening steels are suitable for cleaning in sterilizers up to 130°C. Residues of highly concentrated washing agents, tools left in the washer for long periods of time and also egg white and meat residues can cause stains on the blade. Therefore, we recommend cleaning immediately with a mildly alkaline cleaning detergent. Store the knives and sharpening steels in a suitable knife holder, a sheath or in a dry location to avoid the blades hitting against each other. TRADITIONALLY BETTER SINCE 1778 - Friedr. Dick was founded in Esslingen, Germany in 1778 and continues to operate strongly, and has gained international recognition for design and quality. F. Dick is one of the oldest and most respected knife manufacturers. F. Dick knives, sharpeners and tools are used by some of the leading butchers and chefs around the world
