Bentonite clay
Bentonite is a naturally occurring clay with a negative charge, it works by binding particles into heavy clumps which can settle out. Used mostly for whites, although it is effective for reds. Mix into cold water until it is the consistency of putty. Stir very vigorously or use a mixer to ensure adequate mixing. Let sit for 3-24 hours, stirring occasionally. Add about 1 teaspoon of the mixture per gallon of wine to be clarified. Let sit for at least a week before racking off sediment. Most effective when added at the start of fermentation, but can also be used after fermentation. Usage: 1 tsp. per gallon Chemical name: Bentonite clay
