There are several types of dried wood ear mushrooms or black fungus typically used for food, including the black wood ears typically grown in Northeastern China, and the white-back wood ears that’s grown in multiple regions in Central and Southern China. Our white back wood ears/black fungus are grown in central China. There are several distinct differences between the two types of wood ears. The white back variety is considerably larger in size, black on one side and white (or lightly tanned) on the other side. These white back wood ears are not as “meaty” or flavorful as their counterparts from Northeast China, but the nutritional values are similar between the two, with white back wood ears having slightly higher fiber content. The Chinese culture have traditionally believed that wood ear mushrooms have medicinal values. These wood ear mushrooms are in dried form and require re-hydration prior to consumption. Our wood ear mushrooms can re-hydrate in as little as 15 to 20 minutes in warm water. However, for the best flavor, rinse mushrooms with clean water, then soak in cold water for 1 hour (or until mushrooms soften completely).
