Filotea Italian egg pasta is made from farm fresh eggs, and a blend of tipo 00 wheat & semolina flour, just like the fresh pastas are made in home kitchens everywhere in the region. It is then pushed through traditional bronze dies, which give it a porous texture and allows the strands to really absorb sauces well. It is folded by hand, and dried very slowly at low temperatures, and laid by hand once again into the beautiful trays you see here.
