Choi's Kimchi Co. does not pasteurize our Kimchi. As a result, the pouch that contains our Kimchi may expand because of the natural fermentation and the release of CO2 that occurs during transit. Worry not; we process our kimchi daily and ferment our kimchi in accordance with transit times and our cold-chain pack out! Our Kimchi is made using a traditional recipe that has been handed down from generation to generation from our home in Portland, Oregon.
