Cinnamon Verum, or ‘True Cinnamon’ is renowned for its powerful healing effects in the world of non-traditional medicine. It has been claimed to help with things as vast as weight loss, digestion, kidney health, and even memory. This is likely why it was used for centuries as a way to promote health, and has been a staple of non-Western medicine since then. It is important to always purchase Ceylon Cinnamon, as it has a higher content of cinnamon essential oils, and a substantially lower cumourin content, which is the one drawback to cassia or ‘Chinese Cinnamon.’ Cinnamon is a fascinating plant which has existed forever, but has continued to grow in popularity. It is sometimes considered to be part of the fall splice blends, along with pumpkin, nutmeg, and clove, but is magnitudes more popular than any of these other spices. It is actually from a tree, and can most correctly be called the bark of the tree. The cinnamon you purchase is called the inner bark. First, the outer bark is shorn away, then the inner bark is peeled and dried. As it dries it curls up, to give that familiar cinnamon stick look, almost like a scroll being wound up. This is also where it is easiest to spot the differences between Cassia and Cinnamomum Verum. True cinnamon has a much thinner inner bark layer, and curls up more compactly. A Cinnamon Verum stick will be wound tightly with numerous very thin layers. A cinnamon cassia stick will look more like the holiday cinnamon sticks people see in stores, with only one or two thicker curls (relatively, of course). Because of the dainty nature of true cinnamon, and the thinness of this inner bark, cinnamon verum is harder to cultivate and produce. It needs to be aired out properly, and overly damp pieces should be discarded. The edges of these sticks will often fall out, and the sticks themselves will crumble easily compared to cassia. Luckily, this makes it easy to make powdered or ground cinnamon from this more luxurious variety.
