About El Molcajete Mexican Whole Dried Guajillo Chiles 8

Smooth-skinned, deep-red guajillo (wah-HEE-yo) chiles average about 4" by 1" with relatively parallel sides, tapering to a rounded point. With their wonderful flavor and relatively mild heat, they're a fantastic red chile to have on hand for making all manner of sauces, marinades, and salsas. Guajillos needn't be limited Mexican cooking either - their versatility works well across cultures and cuisines (they make great harissa!). Do note that the occasional guajillo chile may be hotter than average - a feature that has earned them the nickname 'travieso' (Spanish for mischievous!) try using a mexican mortar and pestle.
