The Pequin (pronunciation: Prin-kee-new) registers a fiery 9 out of 10 on the chile heat scale. The chile starts green and matures to orange and when fully ripe is red. It can be eaten at all color stages. As the chile matures the flavor and heat increases. The flavor is often described as sweet with citrus undertones and a slight smoky nutty finish. As a dried chile the heat is more intense as is the flavor. Common uses include table condiment, salsas and sauces, pickling, soups, and vinegars.
