Aji cachucha most commonly called in Cuba is also known as aji dulce in Puerto Rico and Dominican Republic or ajicito and aji gustoso in other countries. It is a small perennial sweet chili pepper. In other regions it is known as ají dulce or ajicito. The plant can grow to a height of about 5-6 feet tall. Pepper plants will produce flowers that can self pollinate. Once the seed is planted and it germinates, the ají cachucha plant is very vigorous. It grows best an area with in full sun, but will also grow and produce fruits shady area. In sunny area the plant will grow more leaves and a thicker stems. If you live in an area that has very cold winters, consider planting it in a pot that you can easily bring inside during the colder months. Although aji cachucha plants can be propagated by cuttings, he best way to propagate it is by seed. Seeds germinate fast and the plant produce fruits in the first year. Aji cachucha can be harvested while they are still green, or you can wait until they are in orange or all red. You can eat the seeds for more flavor and texture or you can remove them. Aji cachucha is used to season Cuban, Puerto Rican, and Dominican dishes, such as meats, beans, rice, etc. Most sofritos are made with aji cachucha as an ingredient. The plant will produce enough aji cachucha peppers to season all your dishes! Planting instructions: Lightly cover the seeds with ¼ inch of loose soil. Make sure to water the soil with a spray bottle or carefully water so that you do not disturb the burried seeds. If you can cover the pot with a clear lid or plastic wrap to keep the soil moist. Keep the covered pot in a warm dark area until it germinates. Once it germinates, uncover it and place it in a sunny area. You can also plant the seed in a pot outdoors just make sure you water it often to keep the soil moist for the seed to germinate.
