A unique perennial cool-weather vegetable grown for its thick, pink, sour stalks, which are the perfect addition to jams, crumbles, pies, sweet soups, sauces, cocktails, and rhubarb wine. Start seeds indoors in pots or seedling trays 8-10 weeks before the last frost. Soak the seeds for a few hours between wet paper towels, and plant them in sterile potting soil. Plant 2-3 seeds per pot, ¼ - ½ inch deep. Keep the soil moist, but not overly wet. Protect the seedlings from the bright sun. Transplant about 2 weeks before the last spring frost in a fertile, partially shaded, free-draining soil. Put some mulch to keep the soil cool. Before planting harden plants off by taking them outdoors during the day and on warmer nights. The plant will produce stalks in the 2nd year. In zones 9-10 you can plant seeds directly into the garden in August for harvest in March-May.
