Sazon has a unique history as an island seasoning, that has roots in Mexico. Mexico and Puerto Rico both have used legumes as a key food group for centuries. It is not surprising that these cultures each developed their own sets of spices that they would use to season the beans they cooked up. In Puerto Rico, this base of spices used for beans came to be called Sazon, which is Spanish for seasoning. This generic term is fitting given the many varieties and differences from town to town, and even family to family. They all have annatto, and some combination of the other ingredients. The exact mix changes, but over the centuries they have begun to coalesce around the special mixture we have here.
