Vegetable seeds grown in the USA. 8-12 days microgreens. Red leaf vegetable amaranth Seeds. Amaranthus Tricolor. 30 to 40 days to maturity. Heirloom, Non-GMO, Open Pollinated. Annual. Edible amaranth is also called Chinese Spinach or yin choi. The purple red oval leaves of this beautiful variety have a bright green margin. The plant produces a high yield of tender leaves even in warmer weather. Perfect for microgreens, salad mixes, and as a garnish. Amaranth will tolerate hot, dry and moist conditions but will not thrive in cold temperatures. Prepare fertile, well-drained soil. Sow seeds in late spring/early summer after last frost in a warm, sunny location. Can be sown by broadcasting and thinned during growth. Keep soil moist. Do not use nitrogen fertilizer, as it will accumulate excess nitrates. The leaves and stems are best when harvested young. Use in stir-fry, soup, and fresh in salad. Can be prepared like spinach. Germination Temperature: 70-80°F. Seed Depth: On the surface, lightly cover. Sowing Indoors Start indoors 6-8 weeks before the last frost. Provide 70-80°F soil temperature. Sow 2-3 seeds per cell/pot. Thin to the strongest seedling. Transplant after last frost, 6-12" apart. Sowing Outdoors: After the last frost when the soil temperature reaches 70°F. Sow a few seeds every 3-6", thin to 6-12" apart. Harvest: Start picking young leaves when plants are 12" tall.
