How Does An Airlock Work? An airlock is attached to, or built into, your jar lid and is used to create an anaerobic (without air) fermentation environment with a glass canning jar. 1.Remove the cap and the protective foam insert. Discard the insert. Fill the inside of the airlock 1/2 way with water. 2.Put the cap back on and insert the tip of the airlock with silicone grommet into the lid. Make sure it seals up the bottle tightly. 3.Gas is released during fermentation. You will see bubbles forming and escaping through water in the airlock. 4.The airlock kit prevents oxygen from entering the carboy since oxygen will ruin the fermentation. 5.Sometimes, remove the airlock to let the fermentation burp. Check on your fermentation and release pressure (This step may not be required. It depends on your project) Do You Still Need a Fermentation Weight when Fermenting in a Jar with an Airlock? Yes. Let me explain why. Even when using an airlock, you will need a fermentation weight when fermenting sauerkraut so that you can hold your packed mixture below the brine.
