Allulose is a relatively new sweetener on the market and is getting praise for its amazing sugar-like properties while only having 1/10th the calories. Research is showing that there is no glycemic load so its perfect for those following a Ketogenic diet or people with diabetes. This is the same sweetener we use in our mug cakes because it works just like sugar in all of your baked goods. It browns, caramelizes, crisps. It doesn't have any cooling sensations (erythritol) or weird bitter aftertastes (stevia). Allulose exists in small amounts in figs and dates as well as other fruits. Scientists were able to isolate it and come up with a process to turn Fructose into Allulose through an enzyme process. Now we get to use it in all of our home recipes. Allulose is slightly less sweet than sucrose or table sugar. Most people agree that it is ~70% as sweet so you may need a bit more to get the same effect.
