  • Unlike most varieties, which are grown specifically for use in pickling or in fresh eating, Eureka can do both—deliciously.

  • This dark-green, white-spined, firm cucumber reaches anywhere from 1½ to 5 inches long, depending on how young you want to pick it. Harvest the fruit early for pickling and it will make the darkest green batch of pickles you ever saw. Let it grow on a bit and it's a fabulous fresh slicer for salads and snacks.
