Liquid Nitrogen (LN2) has a variety of uses. The widest use of LN2 is of course cryogenic storage; storage of anything you want to keep cold. However, there are other uses for LN2, such as Cryofrying. Cryofrying is a term used in Modernist Cuisine that refers to lightly cook a meat to brown on both sides, flash freezing the meat in Liquid Nitrogen, and then deep frying the meat until done. Using this technique will cook your meat to a perfect medium rare.
