Its unique flavor, which many people compare to celery, can be used as a salt substitute, plus it gives extra flavor to vegetarian soups, stews, salads, and casseroles. Use lovage much like you would celery or parsley, but in smaller quantities since it does have a stronger flavor. Lovage works well in potato and tomato dishes, or anything in the starch category. Every part of this herb plant is edible! The lovage herb plant is quite large. It will grow to about 2 - 3 feet the first, year and then possibly upwards of 6 feet after the first year. One lovage herb plant is enough for a family. It can take partial shade and does better in soil that is fairly fertile and not too dry. If you have a longer growing season, you can direct sow this herb seed outside. In shorter growing season such as the North, start lovage herb seeds indoors about 6 weeks ahead for transplanting. Germination of these herb seeds generally takes about ten to fourteen days. Typically, use 4 to 5 lovage seeds per plant when planting this herb seed. When you move the plant to the garden keep it well watered for the first couple weeks, and feed with a natural fertilizer. The first year you won't see its full growth-it will only reach about 2 foot, but you can using the herb plant when it is only about 1 foot tall. Cut stems from the side, and chop to use in recipes.
