Translated as “little raisin” in Spanish, this rich-flavored, medium-hot chile has hints of berries and licorice. Particularly good in sauces. When fresh, it is known as the Chilaca, and turns to a dark purplish brown as it ripens. The Pasilla is considered one of Mexico's most highly regarded chiles.
