With undertones of lemon and onion and a delicious, crisp and zesty flavor, this vinaigrette shines on green and Greek-style salads, is a flavorful marinade for seafood and chicken, and is fabulous brushed on grilled artichokes and asparagus.- Gluten Free- Dairy Free- Soy Free- Vegan Couscous Salad with Sun-Dried Tomatoes1 box Fantastic Foods Organic Couscous.1 8-oz bottle Annie's Naturals Roasted Garlic Vinaigrette, Organic2/3 cup (approx. 2 oz.) sun-dried tomatoes, cut in julienne or small dice1 medium red onion, chopped fine1 medium red bell pepper, seeded and diced1 tsp crushed red chili pepper1 tbsp fresh thyme leaves, chopped fine, or 1/2-1 tsp. dried thyme1 tbsp coarsely chopped fresh mint leaves2 tbsp chopped chives or scallion greens1/4 cup pignoli nuts, lightly toasted.Directions:1. Soak sun-dried tomatoes in a little warm water to re-hydrate.2. Cook couscous according to package instructions, stirring, and remove from heat. Fluff up again with large fork or whisk if needed to break up lumps.3.
