You can easily maintain a cast-iron griddle. Simply coat the surface with a little bit of vegetable oil on a paper towel and place it upside down in a 400-degree oven for an hour. Pro Tip: Lay a sheet of aluminum foil below it to catch any drips. The result is a hard and glassy layer that helps to make cast iron naturally nonstick. After the pan cools, store it separately so it doesn't get scratched, and it gets better with each use. Chainmail for the win Dishwashers and harsh soaps are not good for cast iron pans... but our chainmail scrubber is! Simply run hot water into the griddle and move the griddle around, pressing harder to clean and remove stubborn, stuck-on bits. Blacked meat and or burnt vegetables get caught between the rings of the chainmail and are pulled up seamlessly. Make sure to repeat the seasoning process after every serious scrubbing and always dry it thoroughly (try the oven!) because any water left on the pan will cause rusting.
