Mad Cow Cutlery Packinghouse Steels were designed and manufactured for the meat industry. We understand the uses and abuses of steels in the meat processing and food service industries. First, our handles are constructed of temperature and impact resistant polymers, and are designed to fit comfortably in the hand for better control. Unlike many steels, especially low cost models, our steels are plated and hardened to levels above industry standards, to ensure that no matter how hard of knife blade you have, the steel will be able to straighten and hone your edge. To increase strength and improve balance, our steels, we use longer rods, so more steel is in the handle. The Packinghouse Series of steels come in three different cuts or styles. All models have 10" of exposed rod to work on. All handles are in high visibility red. The Polished and Micro-Fine Cut models are a smaller diameter than most round steels, and the preferred diameter in most meat processing facilities. The smaller diameter decreases weight, but will not decrease performance. The reduced weight is ideal if you wear your steel on a belt or chain during production times. The dual cut is a little larger diameter round steel, with two sides polished and two sides micro-fine cut - it is like two steels in one. Our steels are manufactured in Germany of the highest quality materials, using multiple production steps and tests to produce the very best steel on the market. Our steels come with a lifetime guarantee against defects. Care of steels: all steels should be cleaned and dried at the end of the day. Some materials, such as blood or high acidic foods can cause discoloration or pitting of steels. We perform an extra hardening step, that also reduced the chances of pitting, but we recommend proper care to extend the life of your steel.
