The stabilizer allows you to stabilize up to 4 gallons of wine prior to bottling, using 1/2 teaspoon per gallon. The acid blend is a mix of citric, malic, and tartaric acids that helps wine yeast ferment properly. Adding one teaspoon of the acid blend per gallon increases acidity by 0.1%.
