Filipinos love to celebrate Christmas! They have undying traditions that they continue to pass on to the new generations. They celebrate the season longer than any nation. Their holiday season begins on September 1st when Christmas carols start to play on the radio. It ends on January 6th the following year, in celebration of the Feast of the Three Kings. And that entire time, the Christmas spirit is on—the atmosphere fills up with holiday cheer, dancing lights, glitter, laughter, get-togethers, and good food. Yes, food. The Philippines has a long list of festive recipes they usually pull out come Christmas time and every festive holiday in between and they are all here in this cookbook! You might have grown familiar with the recipes because most of them are also mainstays at birthdays, anniversaries, fiestas, and other family celebrations. But when it’s Christmas, Filipinos would go all out. When you look at the table on Noche Buena (that’s what they call the dinner feast on the night before Christmas), you will see an unbelievably elaborate spread of traditional dishes. Poor households may only manage one or two dishes while the wealthy may prepare a lot, but the spirit of Christmas never falters. Indeed, no other nation does Christmas best than the Filipinos. They anticipate Christmas with so much joy and hope in their hearts, always like excited kids waiting for Santa Claus to declare they have been nice and deserve a prize. That Filipino spirit is very admirable.
