In order to gain better heat penetration on thicker cuts of steak a steak weight is often used. This allows the steak to cook more evenly and a little bit faster which is very helpful on done and well-done steaks. Update International has a perfect steak companion in its 4 1/4†x 8 1/4†cast iron steak weight (SWI-84). It may also be used on many grill-cooked items such as bacon sausages burgers and even hash browns. It has a wooden handle to prevent heat absorption while providing a comfortable grip.
