Sumac is an incredibly middle eastern spice which comes from a red berry that is used to enhance the flavor of the cooking. The main component of its flavor resembles what many feel is a nice, light lemon flavor with a subtle tart nuance. The very deep-colored red berries are typically ground up into a very fine powder, usually incorporated into the base flavor of a dish or it is sprinkled on various meats. Here's a recipe to get your started using this wonderful seasoning: Sumac-Dusted Oven Fries Serves: 2 to 3 Preheat oven to 350°F. Peel potatoes. Slice 4 medium sized russet potatoes into 1/2-inch strips. Toss with 1 Tbsp. Olive oil and a pinch of salt. Bake for 30 to 35 minutes, stirring every 10 minutes. When the fries are done, remove from oven and toss with 2 Tbsp. USimplySeason Sumac. Serve with your choice of spread on the side.
