South American - Brazil Peaberry - Pocos de Caldas is a very fertile area whose green hills are scattered with coffee farms. It enjoys a mild, temperate climate and an average altitude of at least 1,000m (3,280 ft.). Peaberries are very rare, occurring only 5% or less in crops when only one bean inside the cherry develops, creating a much sought-after concentrated flavor. This coffee is naturally processed using the semi washed processing method at milling. The semi washed processing produces a brighter cup than the traditional natural processing method. This coffee is produced by indigenous members of the local farmers cooperative with Brazilian Arabica Cultivars of coffee plants. It has taste notes of hazelnut, orange, chocolate, brown sugar. 1) ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
